From Kate's Plate: What I Ate 7.19.16


It may not be the best example and I forgot to take half the photos, but considering I remembered to care about the times, I figured I should share with you the meals from the day!

BREAKFAST:

930am

Coffee with Coconut Oil

Smoothie - Banana, Blueberries, Chia Seeds, Coconut Milk, Collagen Peptides, Nutrience AM packet

2 Applegate Turkey Sausage (cause I accidently bought turkey - I'm not a huge fan)

About an hour later I had an Energy Bite :)

LUNCH:

145pm

Leftovers from the night before: Mustard Glazed Chicken Thighs from 21-Day Sugar Detox, Roasted Red Potatoes, Cucumber Salad with homemade seasoning (picture from previous night)

DINNER:

6:40pm

Zoodles with Shrimp and Tomato Sauce + Red-skinned Potato Fries

^^^ So this was a very strange combo of flavors...but let me explain. I was pretty excited all day to make Buffalo Shrimp Lettuce Cups...then, the time between 5:30-6:30 just disappeared and I had 10 minutes to make dinner before I ran my Mindfull Makeover program call! So suddenly, my kitchen became like an episode of Chopped and I just started throwing ingredients and food everywhere. Luckily, I had started the potatoes way before because I knew they would take about an hour to cook. Anyway, my lettuce cups turned into shrimp zoodles? I'm not entirely sure...but it was okay! And the only photo I took was from Snapchat - which I love! Come follow me: kmm810.

It was so awesome to connect with the ladies of the group <3 They are amazing!
